Apple Crumb Cake (A Diabetic Recipe)

Vegetable cooking spray

1 cup all-purpose flour

1/3 cup rolled oats

1/3 cup sugar substitute

¼ cup brown sugar substitute

1 tsp ground cinnamon

1/8 tsp ground nutmeg

1/8 tsp salt

4 Tbsp. Margarine, cut into small pieces

½ tsp. Baking powder

½ tsp Baking soda

1/3 cup unsweetened apple juice

1 tsp vanilla extract

¼ cup egg substitute

2 apples, peeled, cored and chopped

Preheat oven to 350 degrees F

Lightly coat an 8” square pan with cooking spray

In a bowl combine the flour, oats, sugar substitute, cinnamon, nutmeg and salt.  Cut in the margarine until the mixture resembles coarse meal.  Reserve 1/3 cup of mixture, set aside.

Combine remaining flour mixture with the baking powder, soda, apple juice, vanilla and egg substitute.  Beat at medium speed with an electric mixer until well blended.  Fold in apple.

Spoon mixture into baking pan and level out.  Sprinkle with reserved flour mixture.

Bake 30 to 35 minutes until the center springs back when lightly touched and top is golden brown.

Cool in pan, cut in squares, sever warm or completely cooled.
