Grandma's Sauerkraut Soup

   From AngelDeNoir—9-29-04

This is something I grew up on and so did my kids! This is
a great hearty meal for cold winter nights.

Ingredients:

2 lbs. Lean pork butt or roast.
1 ˝ lbs. sauerkraut, rinse and drained
2 Tbsp oil
2 Tbsp paprika (preferably Hungarian)
1 large can of tomato sauce
1 Tbsp sugar
Enough water to cover pork butt
Pepper to taste

Refrain from adding salt as the sauerkraut is salty, after soup is
cooking for awhile taste and add salt as needed.

Preparation:

Brown the meat in oil in a heavy pot with lid.
Sprinkle meat with paprika making sure you do not burn the paprika.
Put in the drained sauerkraut, tomato sauce, and sugar.
Mix.
Cover pot.
Cook slowly for about one hour, or until meat is tender.
The aroma will make your mouth water.
Serve in soup plates, with good crusty bread.
