Polish Sausage & Sauerkraut

(This is My Aunt Mary’s recipe she handed down to me)

 

Ingredients:

 

2 ½ LBS Smoked or fresh polish sausage (real polish sausage)

1 medium onion

I large can of mushrooms or 1 LB fresh mushrooms

2 large cans of sauerkraut (I use Franks in a can) just plain ordinary

sauerkraut.

Pepper

Butter or oleo

Oil

 

Preparation:

 

If using fresh polish sausage, brown on all sides. If using the smoked polish, don’t do anything. Cut sausage into between 2 ½ to 3 inches length, set aside.

Dice onion and brown along with pepper to taste( I use a lot of pepper) in butter or oleo. Then add mushrooms (set aside).

Put sauerkraut in a strainer and rinse & squeeze (about 3 times)

Lay kraut in baking dish (  I use a 9 x12 baking dish).

Pour the onions, mushroom and butter over kraut.

Then lay polish sausage over the top. Cover with foil and bake for an hour at 350 degrees.

 I never use salt because the kraut and sausage has salt in them.

If you’d like , serve with mashed or boiled potatoes and a veggie( I like fresh butter beans) Typical of a Russian descent. <<LOL>>
