Pork Chop Casserole

Ingredients:
4 or 5 large potatoes
1 can of mixed veggies
1 large can of tomato paste
3 or 4 lean pork chops
2 1/2 qt casserole dish
Preparation:
Boil potatoes (in jackets) until fork slides in nicely, but still firm.
Let cool.
Peel and slice potatoes about 1/4 inch thick.
Brown pork chops ( just until lightly browned)
Drain mixed veggies of their juice.
LAYERING:
Put a layer of potatoes in the bottom of your casserole dish.
A layer of the mixed veggies, another layer of potatoes.
Finish up with a layer of mixed veggies.
Add 2 cans of water to your tomato paste and blend well.
Pour half on the tomato mixture over potatoes and mixed veggies.
Place pork chops over all. Then pour the rest of the tomato mixture over the chops.
Cover and bake for 1 hour at 350 degrees.
